Create computer video files from a few DVDs

I have several DVDs (6-8, I think) of past projects I participated in (community theater, rehearsals, art song recital - boring to everyone but me).
I'd like to be able to discard the DVDs but still enjoy the good old days (by looking at these performances) in 30 years. I'd like to store the video on the same hard drive/backup system that I'm using for music.

They're probably not "locked" so it shouldn't be too difficult, but I don't want to spend time learning how to do this.

It would be very helpful if you were in the NC Triangle (US) area -- I'm not super keen to ship these, but might do so if there's no other option.

I'm hoping to find someone who thinks this is really easy, as I'm not really prepared to spend a huge amount. However, I do want to pay you fairly.

Please MeMail me if you think you can do this. If you can give a broad statement of _how_ you would do this and the type of output I can expect, that would be helpful.

I don't know a lot about video file formats, so I hope you'll help me choose a good one.
